Tim served us some excellent stew. I put the recipe below.
Recently, Tim has been finding most of his recipes on Pinterest. Today he was in the mood to look through some cookbooks. This recipe, which we all loved, was from the Better Homes and Gardens Crockery Cooker Cook Book. The apples and apple cider added a nice taste for autumn!
Cider Stew
2 pounds beef stew meat
2 T cooking oil
3 medium potatoes, peeled and cubed
3 medium carrots, cut into 1/2″ pieces
1 medium apple, coarsely chopped
1/2 cup coarsely chopped celery
3 T quick-cooking tapioca
1 bay leaf
2 cups apple cider
1 T vinegar
1/2 tsp. salt
1/2 tsp caraway seed
1/4 tsp dried thyme, crushed
1/4 tsp pepper
Cut meat into 1 inch cubes. In a large skillet brown meat, half at a time, in hot oil. Drain off fat.
Meanwhile, in the crockpot, combine potatoes, carrots, onions, apple, celery, tapioca, and bay leaf. Stir in apple cider, vinegar, salt, caraway seed, thyme, and pepper. Stir in browned meat.
Cover, cook on low heat setting for 111 -12 hours or hight heat setting for 5 1/2 – 6 hours. Remove ay leaf.
Serves 8
