I prepared and served a light meal during Karen’s several Customer Open House events last weekend.
I have gotten to know and enjoy her regular customers…(and I know they like to give me grief!)
For this event, I tried out a new salad and we all loved it. The recipe is below.
Fast Fumi Salad
(from a 1992 Betty Crocker Bravo Pasta mini cookbook)
3 T butter
1 pkg (3 ounces) Oriental flavor ramen noodles
2 T sesame seed
1/4 C sugar
1/4 C vinegar
1 T sesame oil
1/2 tsp pepper
2 C cut-up cooked chicken
1/2 C dry-roasted peanuts
4 green onions, sliced
1 pkg (16 ounces) coleslaw mix
Melt butter over medium heat. Add the seasoning packet from the noodles. Break the block of noodles into bite-size pieces over the skillet and stir into the mixture.
Cook while stirring for 2 minutes. Add sesame seeds. Cook and stir 2 minutes longer or until noodles are golden brown.
Mix sugar, vinegar, oil and pepper in bowl. Add noodle mixture and the rest of the ingredients and toss. Serves 6
