People often ask me how I select my recipes and I tell them that Karen gets the fun of doing that. She loves to read cook books, but doesn't like to cook, so she puts Post-It Notes by recipes she would love for me to make for her. Then when I am ready to try something new, I open a cook book filled with Post-It Notes and see which one I am in the mood to do.
This way, Karen feels like she is a part of the process. Actually, she just has the best of both worlds, getting to choose her recipes and having a personal chef to cook them!
Here is one of our cook books with her notes:
and here is the salad recipe I am making next. It sounds like a good early autumn salad!
The ingredients are:
1 cup wild rice, uncooked
2 cups cooked and diced chicken
1 1/2 cups green grapes
1 cup sliced water chestnuts, drained
3/4 cup reduced-fat mayo
1 cup cashews
Seasoned salt to taste
Cook rice. Add all other ingredients except for cashews, which are added just before serving.
