Back by popular demand: more recipes from me! (Thanks to those of you who asked!)
Karen attended an annual reunion of old friends on Sunday and needed to bring a salad.(Of course, I would be making it!)
She looks at recipes and picks out two or three for me to look at and then I choose which one to make!
This is the salad I chose and we loved it! (It got great reviews at the part as well.) I had never done anything with bok choy before so that was fun.
Bok Choy Salad
1 head bok choy, chopped fine
2 bunches green onions, sliced thin
– combine those two ingredients and set aside.
2 pkg (3 ounces each) ramen noodles, broken (we aren’t using the seasoning pack)
2 T. sunflower kernels
1/4 c. slivered almonds
1/4 c. butter
– Saute the noodles, sunflower kernels, and almonds in butter for 7 minutes until browned. Cool and add to bok choy mixture.
Dressing:
1/3 c. sugar
1/2 c. olive oil
2 T cider vinegar
1 T soy sauce
Combine in a jar and shake well. Add to salad just before serving.
