Cooking is one of my pleasures and today I will share with you on Tuesdays with Tim: My Mother's Recipe! One of the recipes I am most known for is my mother's recipe for Rhubarb Crisp!
Rhubarb Crisp:
Put cut up rhubarb in a 9 x 13 pan, enough to cover 2 inches on the bottom of the pan.
Add 1 cup sugar with some flour mixed in.
Dot with butter.
Topping:
1 cup brown sugar
1/2 cup butter
1 cup oatmeal
1/2 cup flour
Mix together. (I usually use my fingers to mix them together, but my mother uses a chopper. She actually gave me one, so when she is here I use that!)
Spread over the rhubarb.
Bake at 350 until golden brown and bubbling in the middle.
I also do two great variations on the same recipe:
Apple Crisp: We have an apple tree in our back yard (as well as rhubarb) so I make plenty of apple crisp with the same recipe.
Triple Berry Crisp: I buy frozen Fancy Berries at Trader Joe's which is a mix of different berries. This dish needs a little more flour.
Of course, ice cream is the favorite topping for all of these crisps! I am allergic to dairy so I have found So Delicious, a coconut based non dairy no soy ice cream. I get the Vanilla Bean kind.
